The other Chili

There are two types of chili common in the US and they are not related. The one everyone knows Texas or Tex-Mex Chili. And if you live in the Southwest you certainly know several other generic names for it.

The other kind is what you have had if you either lived in Cincinnati or have eaten in any of the Skyline Chili franchise. Another chain from Cincinnati has a smaller franchise known as Queen's Chili. Cincinnati is also known as The Queen City.

Originally this style was from Macedonia and Greece. Rather than chillies providing the spicy taste it uses seasonings such as cinnamon, coriander and ginger for the flavor and heat.

Whereas the Tex-Mex chili is served by itself as a stew, Macedonian chili is served on a bed of spaghetti right from neighboring Italy. Cheese is also a common garnish although America or cheddar rather than more traditional Greek cheeses although the original was most likely Feta and similar cheeses.

One other important difference, the meat is mutton instead of beef in the traditional style although beef is used by almost everyone including the chains. I have not been able to determine if the other two garnishes used by Skyline, beans and crackers are traditional or a local invention.

For those who are not familiar the garnishes are called 2-way, 3-way, 4-way and 5-way chili; either plain chili or one or more additions.

If you happen by one of the restaurants give it a try. It's very affordable and a new taste experience even for most long time chili fans. Or if you have tried it and decided it was not chili at all, now you know why.
